Cooling Watermelon Gazpacho Ingredients

  • 1 cup fresh watermelon juice (you'll need about 2–3 cups cubed melon)

  • 1/2 cup fresh cucumber juice (about 1/2 cucumber)

  • 3/4 cup cucumber, peeled, seeded and medium diced

  • 1/4 cup red bell pepper, small diced

  • 1 cup watermelon, cut into small cubes

  • 2 tbsp shallot, minced

  • 1 Tbsp jalapeño, seeded and minced (optional)

  • 3 tbsp fresh mint or cilantro or basil (your choice!), minced

  • 1 tbsp red wine vinegar

  • 2 tbsp lime juice

  • 1/4 tsp salt (or, to taste)


How to make Cooling Watermelon Gazpacho

  1. Either juice your watermelon and cucumber (if you're lucky enough to have a juicer!) or blend it in a high-speed blender and strain through a sieve.

  2. In mixing bowl, add the juices, cucumber, bell pepper, watermelon, shallot, jalapeño, herbs (mint, basil or cilantro, whichever herb you choose) and vinegar. Stir gently to mix all ingredients.

  3. To serve, add the squeeze of lime and sprinkle of salt.
